118. Dream Cocktail


My interpretation:
  2 oz Gin Lane 1751 London Dry
  1 dash D.O.M. Benedictine
  1 tsp powdered sugar
  1 T lemon juice
  1 pasteurized egg white 

Shake well with ice (I like the reverse dry shake here, it requires little practice and results in a good foam), strain into claret glass, goblet, or stemware with about 5 oz capacity. — Like the Clover Club, this is a Gin-based drink featuring citrus and egg white froth, resulting in a nice creamy Sour, augmented with a dash of honey-spice from the Benedictine. In the source, again, Straub 1913, and again in JM 1916, the liqueur is not specified, implying perhaps that the drink might be made with any liqueur preferred by the customer or barkeeper.

102. Cook Cocktail

My Interpretation:
  1.5 oz Hawthorn’s London Dry Gin
  0.25 oz Luxardo Maraschino.
  1 T fresh lemon juice
  1 egg white 

Fill mixing-glass with broken ice, shake 15 seconds, omitting egg white. Strain out ice, add egg white, shake 15 seconds, strain into cocktail or sour glass, serve. — This Jack’s Manual staple, a Sour bearing some similarity to the Clover Club, first appears in the 1910, 2nd Edition and continues without change.

100. Congress

My interpretation:
  1 oz Asbach Uralt
  1 oz Combier Crème de Rose
  3 dashes Noirot orange-flower water
  1 egg white.

Shake with ice 15 seconds, omitting egg white. Strain out ice, add egg white, shake 15 seconds, strain, and serve in small wine glass befitting the name. — This drink appears to be another borrowing from Straub 1913 for JM 1916.

96. Coffee Cocktail


My interpretation:
  1 oz Offley Tawny Port
  1 oz Asbach Uralt
  1 pasteurized chicken egg, separated

In mixing-glass briefly mix egg yolk, brandy, and port; fill with cracked ice and shake vigorously 15 seconds. strain out ice, add egg white, shake 15-20 more seconds, strain into liqueur glass or footed goblet. Recipe may be doubled while retaining one egg, and served in an Irish Coffee mug or claret glass. — This classic Port-Wine Flip is humorously named “Coffee Cocktail” because of its lattè-like appearance and its suitability as an after-dinner drink. JM 1908 specifies Martell brandy. The strange 3rd edition (1910-S) of Jack’s Manual has 3:1 ratio of Port and Creme de Cacao, while retaining the spoonful of sugar from the first and second editions. This momentary attempt to improve the recipe must have been thought better of, since JM 1916 is back to the classic formula with Brandy and sugar. The sugar is omitted from 1933, in my opinion without detriment. Ruby Port and bright orange pastured egg yolks will afford a deeper, richer color to the flip.

93. Clover Leaf

 My intepretation:
  1 T fresh lemon juice
  1 pasteurized egg white
  2.0 oz Castle & Key London Dry Gin
  1 tsp Jack Rudy Grenadine

Fill mixing-glass with broken ice. Shake well (20 second), omitting egg white. Strain out ice, add egg white, and shake 10 seconds, garnish with mint sprig. — A nice classic sour, this is closer to the Clover Club in the Savoy Cocktail Book than Jack’s version of that cocktail which was added to the JM 1916. Jack’s Clover Leaf was picked up earlier, before Straub, probably from personal experience at the Astoria or other New York bars. To increase the distinctness of the two cocktails, Jack uses Grenadine here, having used Raspberry syrup and three citrus juices in the Clover Club. Both are great versions of these classics, but this one was the staple Clover- cocktail from earlier editions of JM.

92. Clover Club Cocktail


My interpretation:
  1 pasteurized egg white
  1 tsp fresh lime juice
  1 T fresh lemon juice
  1 T fresh orange juice
  1 tsp homemade raspberry syrup
  2 oz Castle & Key London Dry Gin
  1 spray, or large sprig, fresh mint

Fill mixing-glass with broken ice. Shake all ingredients (including mint) except egg white 10 seconds, strain out ice and mint, add egg white to mixture, shake 10 more seconds, strain into cocktail glass, serve. — Note Jack’s recipe involves more juice than usual. This helps to distinguish it from the Clover Leaf in a more substantial way than just the garnish (as in the Savoy Cocktail Book).

69. Café de Paris Cocktail


My interpretation:
  1 Vital Farms egg-white
  3 dashes Hiram Walker Anisette
  1 barspoon heavy cream
  2 oz Bombay Sapphire

Shake well (20 seconds) with fine ice, strain into glass with approx. 3 oz capacity. — This classic also comes to the JM tradition from Straub in which it is spelled Cafe de Paree. Here, of course, the Cafe refers not to coffee per se, nor of course to the ’30s London night club, as some have suggested, but to the venerable 19th-century coffee-house in central Paris—either to indicate its supposed origin, or else to make a nostalgic association without basis: “Fit for the fashionable madames at the gay old café de Paree!”

68. Café au Kirsch Cocktail


My interpretation:
  1 oz Clear Creek Cherry Brandy
  1 oz Remy Martin VSOP
  1 Vital Farms pasteurized egg white
  1 oz Portland Brew Columbian roast coffee, ice-brewed (roasted by Summit Coffee Co.)

Frappé, or shake well with finely crushed ice until frost forms on shaker, about 20-30 seconds. Strain into goblet sufficient to hold 4–5 oz. drink so that no ice chips mar the egg-white head; serve. — This classic drink, a cocktail in name only, appears in JM 1916 following the same recipe as Straub 1914, which notably lacks sugar. It may be that Straub meant cherry cordial instead of Kirschwasser; Cherry Heering in fact works wonderfully here but makes for an entirely different drink. Preferably, if the customer desires, dissolve 1 tsp sugar in coffee before mixing.

28. Beauty Cocktail


My interpretation:
  1.5 oz Hawthorn’s London Dry Gin
  0.75 oz Martini & Rossi Extra Dry Vermouth
  0.75 oz Yzaguirre Rojo Sweet Vermouth
  1 eggwhite
  1 dash Grande Absente absinthe
  1 barspoon sugar syrup 

Shake ingredients over cracked ice, finely strain, serve.
